Atwater Market



The bounty has begun... 
The market is exploding with colors and flavours; it can surely inspire anyone to create something exciting and new. Sunday's diner was a summer calzone, filled with fresh corn, peppers, carrots, tomatoes, onions, garlic, three different cheeses and summer sausage, followed by a savoury raspberry tart.

I spent a few days working on my sister's food truck at the Just for Laughs festival in Montreal.

The Final School Supper





The kids finished the 2011-2012 school year and wanted to feast with their little hands; so we made some killer wings, sweet potatoes chips and crudités with a wonderful cilantro dip. 
It didn't take long for them to crash hard... What a year!

Fusion Farm's BBQ - Beer Can Chicken [2012]

The Fusion Farm's BBQ trials continue. This week's instalment is a very simple yet wonderfully succulent  smoked chicken a la beer can.

It begins with a bird... Grain feed/Free range are my preference.

A dry rub - go crazy and create your very own.

Pound as much rub on that bird as you like - I put a shallot in the cavity as well.

The perfect size can; have a few swigs before you load the bird.

Load it up and fire up the BBQ - it needs a good 3 hours at around 300 degrees. I used maple wood today and it was great flavour.
